If you are planning to make tacos, I would strongly recommend using the boneless skinless chicken breasts.

Place your chicken in the crock pot and add enough water so that the chicken is completely covered. Empty one packet of taco seasoning into the water and carefully turn the chicken pieces so that they are well coated.

You can also add in a can of tomatoes with chiles, if you like; for a little extra zing. Place the lid on the crock pot and turn the heat level up to high.
