Mexican Dinner Recipe

A Mexican dinner recipe can be one of the easiest and best ways to throw together a quick supper without a lot of thought and preparation, perfect for those nights when you want something substantial and tasty without going to a lot of trouble.

The following Mexican dinner recipe is also a perfect dish to bring to pot lucks and dinner get-togethers. To make this dinner even simpler to prepare, assemble the ingredients the night before and refrigerate overnight.

When you return home the following day, simply slide into the oven for a Mexican dinner that is easily ready for the table in less than thirty minutes. Add a green salad and a side of chips and salsa and you’re ready to go!

Ingredients:
* 1 can refried beans
* 1 lb ground beef
* 1 package taco seasoning
* 1 can diced tomatoes
* 1 8oz package of Mexican cheese blend
* 3 teaspoons crushed garlic
* 1 medium onion, chopped
* 1 bag of nacho or tortilla chips

Directions:
* Brown the ground beef and drain well.
* Add package of taco seasoning and diced tomatoes to the meat.
* Allow to simmer 2 to 3 minutes.
* Mix in garlic and onion.
* Cover bottom of a 9x12 oiled casserole dish with the refried beans.
* Next, layer the meat and taco seasoning and tomato mixture over the beans.
* Sprinkle shredded cheese over top.
* Bake in 350 degree oven till cheese melts.
