Mexican Party Recipe

Just about any Mexican recipe can easily be converted into a Mexican party recipe. Most Mexican recipes lend themselves well to multiplying so it’s easy to make a Mexican recipe to serve a large crowd.

Some of the most popular Mexican recipes are quesadillas, tacos, flautas, chimichangas, salsa and other foods that can be easily picked up and carried around. Burritos and tamales also make great Mex-party recipe.

One type of Mexican food that you do not see served at many events is the wide variety of Mexican beverages. Most people focus on appetizers and then completely forget that they can also add a zing to their party with traditional Mexican beverages other than the famous margarita.

Mexican Coffee Recipe
* 3/4 cup ground dark roast coffee (regular or decf.)
* 2 tsp ground cinnamon
* 6 cups water
* 1 cup milk
* 1/3 cup chocolate syrup
* 2 tbsp light brown sugar
* 1 tsp pure vanilla extract
** garnish: whipped cream and ground cinnamon

Place coffee and cinnamon in filter basket of coffeemaker. Add water to coffeemaker and brew as directed. In saucepan, blend milk, chocolate syrup and sugar.

Stir over low heat until sugar dissolves. Combine milk mixture and brewed coffee; stir in vallina. Garnish with whipped cream and cinnamon. Makes 6 cups.

Mexican Recipe for Hot Chocolate

Ingredients:
* 4 c. milk
* 1/2 tsp. ground cinnamon
* 3/4 c. semi-sweet chocolate chips or chunks
* 1 large egg, lightly beaten and set aside
* 1 tsp. vanilla extract

Directions:
In a medium saucepan over medium-high heat, bring milk and cinnamon almost to a boil, stirring with a whisk constantly. Remove from heat and add chocolate, let sit for a few minutes until chocolate is melted completely. Whisk until smooth.




Slowly add a small portion of the chocolate mixture into the beaten egg and blend well. Then, return the egg mixture into the remaining hot chocolate and whip again to blend.

Cook over medium heat for about 4-5 minutes, stirring constantly. Add in vanilla. Whip until frothy and allow to cool for 1-2 minutes before serving. Garnish with whipped cream.
