Mexican Shrimp
Cocktail Recipe

Mexican shrimp cocktail recipe: Everyone loves shrimp cocktail; however, if you want to add a little extra zing or spice or even put a twist on an old favorite for a themed dinner party, then you simply must consider a Mexican shrimp cocktail.

In many parts of Mexico, especially along the coast, seafood is a standard staple for traditional cooking and shrimp is a favorite among locales. Try our favorite Mexican Shrimp recipe, below!

Mexican Shrimp Recipe
* 1 cup water
* 1/3 cup lime juice
* 1 clove garlic, finely chopped
* 2 teaspoons salt
* 1 dash pepper
* 2 dozen raw peeled and deveined shrimp
* 1 avocado, peeled and chopped
* 2 jalapeno chiles, seeded and chopped finely
* ¼ cup tomatoes, chopped
* 2 tablespoons onions, chopped
* 2 tablespoons carrots, finely chopped
* 2 tablespoons cilantro, chopped
* 2 tablespoons olive oil
* 1 ½ cuts finely shredded lettuce
* 1 lemon

Directions:
Heat water, lime juice, garlic, salt and pepper to boiling in a 4-quart Dutch oven; reduce heat. Simmer uncovered until reduced to 2/3 cup. Add shrimp. Cover and simmer 3 minutes; but take care not to overcook.

Immediately remove shrimp from liquid and place in iced water. Simmer liquid until reduced to 2 Tablespoons and then cool. Mix reduced liquid, shrimp and remaining ingredients except shredded lettuce and lemon wedges in a glass or plastic bowl. Cover and refrigerate at least 1 hour.

Just before serving place 1/4 cup lettuce on each of 6 serving dishes. Divide shrimp mixture among dishes. Garnish with lemon wedges.
