Consider the following Mexican Shrimp recipe for Mexican Shrimp Scampi:
Shrimp is a favorite food of many people and this fact is never truer than along the coast of Mexico, where seafood has been a staple of many popular dishes for many years.

Take a visit to any of the small seaports dotting the coastline of Mexico and you will find that seafood, including shrimp, figures into the diet of many of the locales there.

Many other traditional non-Mexican dishes can also be livened up with a few dashes of Mexican spices to create dishes that are lively and enticing.

Mexican Shrimp Scampi
* 2 T Olive Oil
* 2 ea Garlic, Minced
* 1 lb Shrimp, Peeled
* 1/2 c White Wine
* 1/4 c Lime Juice
* 1 c Tomatoes, Chopped
* 1/4 c Fresh Cilantro

Heat oil and garlic in a large skillet. Cook and stir until garlic begins to turn brown. Next, add shrimp and cookfor 4 to 5 minutes, until shrimp begin to turn pink. Now, add wine. Cook for 2 more minutes. Add lime juice and tomatoes and cook until bubbly. Sprinkle with cilantro.
