Pepper Shrimp Recipe
Pepper Shrimp recipe for soft tacos
* 1 pound unpeeled, medium-size fresh shrimp * 2 cloves garlic, minced * 1 tablespoon olive oil * 1/2 teaspoon ground cumin * 1 large onion, chopped * 2 tomatoes, chopped * 1 Anaheim chile pepper, seeded and minced * 1 jalapeno pepper, seeded and minced * 1/4 cup chopped fresh cilantro * 1/4 teaspoon salt * flour tortillas
Serve with: * Fresh lime wedges * Shredded Monterey Jack cheese * Sour cream * Salsa
Peel and devein shrimp. Sauté garlic in oil in a skillet over medium heat, stirring constantly, until tender; add shrimp and cumin, and cook, stirring constantly, about 1 minute. Remove shrimp and set aside. Add onion to skillet; sauté, stirring constantly, until tender. Add shrimp, tomatoes, and peppers; cook until thoroughly heated. Remove from heat, and stir in cilantro and salt. Spoon shrimp mixture in center of tortillas; squeeze lime wedges over mixture, and top with cheese and sour cream.
