Salt! never add to beans until they are completely cooked: Salt to taste or 1 teaspoon per cup of beans just a few minutes before turning off the fire.

My wife will soak the beans in cold water for 5 or 6 hours, even over night would be ok, cuts down on cooking time. Rinse, then cook. It does make a difference for a bowl of beans for dinner. For refried beans. No its not necessary. OK! now we have our basic pinto bean recipe cooked. You did cook them right?

We will need flour tortillas, a cup of beans, go to Pico De Gallo, scoop up a tablespoon full (heaping for me) add to beans.We can call this a quick charro bean recipe. Hey we have a snack, even dinner, more tortilla's please.

Oh I'm sorry, rather have cornbread! Try this. Package of cornbread mix normally calls for ¾ cup of milk.

Here we will use 1 cup. ½ cup of grated longhorn cheese, 1 jalapeño pepper finely chopped, 3 to 4 tablespoons of onion finely chopped.



Mix all together, let chill a few minutes. We are making pancakes.Get out the griddle put over medium heat, well greased, pour mixture and cook 4 or 5 minutes on each side.

O! You say ugly pancakes that's ok. Cut each one in pie like slices now they look better. Now we can go back to eating our beans. We can call this a thick corn tortilla that tastes like cornbread.
