Recipe for Salsa

Raw or cooked, vegetable or fruit, salsa made of diced or chopped ingredients the choice is really endless.

While it is impossible to create a single best recipe for salsa, here's something you probably have never tasted before, but you'll probably like a lot: blackcurrant salsa with mint.

* 1 pound of fresh blackcurrants
* 1-2 tablespoon of wine vinegar
* handful of fresh mint
* 1 tablespoon of sugar
* 2 pounds of tomatoes
* 3-4 green onions with chives
* salt, pepper too taste

Wash and hull blackcurrants, place them in a saucepan, add wine vinegar and sugar then keep on low heat till the juice appears.

From this moment forward, cook blackcurrants for no longer than 4 minutes, stirring gently. After that time, remove them from heat and cool down.

In the meantime, pour tomatoes with boiling water, peel them, then dice. Chop the mint, onion and chives, then mix all ingredients with the cold blackcurrant.

Leave salsa alone for one hour in refrigerator. Add salt, pepper and mint before serving.

This salsa is ideal for chicken and meat dishes and can be served either cold or warm.
