Red Snapper Recipe

* 3 tablespoons of fresh lime juice
* 3 cloves of garlic
* 2 dried bay leaves
* 1 tablespoon of dried oregano
* 3/4 cup of olive oil
* 4-6-oz red snapper fillets
* salt, pepper to taste
* tomato sauce

This snapper recipe is one of the easier to do, yet very tasty. First you have to prepare the marinade.

Blend lime juice together with garlic, oregano, oil, salt, pepper and bay leaves in a food processor. If you find bay leaves too hard to blend, you can crush them instead.

Put red snapper fillets into a large dish and pour the marinade over them. Set the dish in the refrigerator for about an hour.

Do not exceed the time of marinating, for the fillets will become watery and will fragment easily. After about 50 minutes, preheat oven to 350 degrees F.

After an hour of marinating, transfer fillets to a baking dish, bast them a bit with tomato sauce and bake for about 15 minutes, occasionally adding tomato sauce.

When the fish is done, the meat should easily flake away from the bones. Serve the red snapper with white rice, covered with plenty of warm tomato sauce.
