Salsa Carrots Recipe



Even those people who enjoy Mexican cuisine often have no idea that salsa carrots recipe is a real Mexican dish (though not a traditional one).

Recipes for this type of salsa are not very common, probably due to fact that this is not the traditional “old school” Mexican food.

Carrots were brought to Mexico only by conquistadors and it took a few hundred years before salsa carrots recipe became a part of Mexican cuisine.

Carrots give salsa a sweet taste and are used both for raw and cooked ones.



Here's what you need:

* 2 carrots, finely chopped
* 1 lbs of tomatoes peeled and chopped
* 2 pickled jalapeno peppers, finely chopped (include seeds)
* 1 teaspoon of oregano
* 2 tablespoons of pickling liquid from jalapeno chiles
* 2 tablespoons of vegetable oil
* 1 clove garlic, pressed and finely minced
* salt to taste

First peel the carrots, boil them for 1 to 2 minutes, set aside to cool.

When they cool down dice carrots, peel and chop the tomatoes and jalapenos and rest of the ingredigents.

Mix them together and leave in refrigerator for at least one hour to enhance the salsa's flavor.



People who like more filling food should add 2-3 potatoes to salsa carrots. Recipe is almost identical, but you have to remember that you should boil potatoes and carrots separately or you'll ruin everything!
