Mexican Food Recipe

A Traditional Mexican food recipe sometimes takes a decidedly different turn from the Tex-Mex recipes that you may be accustomed to eating in many popular Mexican restaurants.

One of the best examples of the varied ways that traditional Mexican food can be quite different from Tex-Mex food is traditional mole sauce.

In most instances you won’t run across mole sauce in any Mexican restaurant this side of the butter, but even if you have to take a trip across the Rio Grande to taste it, it’s definitely worth the experience.

Fortunately, you won’t have to make such a trip because below we have provided our own version of this traditional Mexican food recipe. Just be aware that this recipe can be highly addictive!!

Traditional Mexican Food Recipe: Mole Sauce

Ingredients:
* 4 Dried Pasilla chilies, stems and seeds removed
* 4 Dried red New Mexican chilies, stems and seeds removed
* 1 med. Onion, chopped
* 2 Cloves garlic, chopped
* 2 med. Tomatoes, peeled and seeds removed, chopped
* 2 tbsp. Sesame seeds
* 1/2 cup Almonds
* 1/2 Corn tortilla, torn into pieces
* 1/4 cup Raisins
* 1/4 tsp. Ground cloves
* 1/4 tsp. Ground cinnamon
* 1/4 tsp. Ground coriander
* 3 tbsp. oil; canola or olive are nice
* 1 cup Chicken broth
* 1 oz Bitter chocolate or 2 tablespoons baking cocoa



Combine chiles, onion, garlic, tomatoes, 1 Tbsp sesame seeds, almonds, tortilla, raisins, cloves, cinnamon, and coriander. Puree small amounts of mixture in a blender until smooth.

Heat oil in a skillet and saute the puree for 10 minutes, stirring frequently. Add chicken broth and chocolate and cook over very low heat for 45 minutes. The resulting sauce will be quite thick.

Traditional mole sauce can be either red or green, depending on which ingredients you decide to use and is normally served over chicken. Experiment!
