This is mainly due to the fact that the Mexican food we enjoy in the US is not actually traditional Mexican food at all, but a version known as Tex-Mex. In addition to the fact that traditional Mex. food can be far different from Tex-Mex, Mexico is such a sprawling country that while traveling in Mexico you will likely encounter many regional differences as well. For example, in the area surrounding Puebla the most typical types of Mexican food that you will encounter will include foods accompanied by mole sauce; which is a thick, sweet sauce made of a combination of herbs, spices and chocolate. Mole sauce has traditionally been served over turkey, but it also frequently accompanies chicken dishes. In the region near Veracruz, you will find that the most common traditional food relies on fish heavily. Veracruz, located near the sea; is the perfect provider of good seafood. Even the tacos and tamales are commonly made from fish in this region. Most typically the fish dishes served here are topped with or are accompanied by chilies, olives and tomatoes. Visitors to the Yucatan will find traditional Mexican food that is a far cry from what they may be accustomed to. Here, traditional foods are commonly served with fruit-based sauces. Seville oranges are a particular favorite. Don’t be at all surprised if your food is served in a banana leaf, either. This is a favorite way of presenting food and it’s delicious as well as appetizing. Finally, in and around Oaxaca you’ll find that the food is similar to the dishes served in Puebla; however with tasty but subtle differences. The cooks in this region prefer to add bananas to their mole sauce and you won’t be able to leave any restaurant in Oaxaca without trying their special blend of coffee; commonly prepared with sugar and cinnamon.
