Modern Mexican cuisine is in fact a combination of Indian traditional food with Spanish trends and a bit of French influences that date back to the French occupation of Mexico. While still regarded as spicy, when we speak about this type of food, Mexican modern cuisine is actually much less spicy and flavored than its traditional predecessor. It also much more often mixes fruits with vegetables, especially with various types of pepper. A good example of modern, non-spicy yet extremely tasty dish from modern Mexican cuisine is guacamole: * 2 ripe avocados * red onion, minced (about 1/2 cup) * 2 tablespoons cilantro leaves, finely chopped * 1 tablespoon of fresh lime or lemon juice * 1/2 tomato, seeds and pulp removed, chopped * salt to taste
Cut avocados in half and peel them, then mash them in a bowl with a fork. Add chopped onion, cilantro, lime juice and chillies, mash them with a fork a little bit more and season the guacamole with salt and pepper. Add chopped tomatoes right before you serve it. Store in refrigerator, wrapped in plastic bag to avoid oxidation.
